Drywall not finished near closet jamb floor, any ideas how to finish?

We're renovating a house and asked our drywallers to use sheetrock on the closet jambs. The closets will have bypass / sliding doors. The doors should open and close up to these jambs without a gap. Since the corner beads and drywall wasn't finished exactly down to our subfloor before the floor was put in this is how it looks.

Should we use some plaster and smooth it out down to the floor? Another idea was to use 1/4 ply which would make for a small gap between the door and jamb. Any other ideas on how we can finish the bottom of these jambs? On other projects we used flat stock trim board ripped to the width of the jambs in that case it worked out perfectly. How should this drywall be finished?
