Comments (17)Happy Canada Day! We've traditionally spent our Independence Days near the grill, before tailgating at the local fireworks show. This year, we are setting sail to a couple of Mexican ports with two teen children and a 3-year-old grandson in tow. It should be interesting, to say the least. I learned a long time ago that, although cruise lines serve lobster, steak, etc., it's usually just mediocre. They are, after all, cooking for 2,000 people. My goal, other than to relax and get plenty of photos of the kids, is to beat my wife at Cribbage at least half a dozen times; not lose at the craps table; and come up with at least 3-4 good food-related topics for my blog. I think I'm just as excited about my Sunday lunch plans. It seems there is an Alfie's Fish 'n Chips still operating near Houston. This chain went bye bye long ago. It won't be 5-star fare ... or even 2-star. But I'll get to revisit one of my (young) childhood faves and write a Yelp! review to boot. Comments (42)Guess I'll introduce myself over here, though many of you already 'know' me or will recognize my screen name since I'm pretty vocal on many other forums! I'm Susan and I live in Houston, TX with my wonderful husband Jason and younger son John (14, with high functioning autism and apraxia). Older son is off at college. I have my own little company designing software for the hospitality industry, and Jason is a professional remodeler who is 'semi-retired' now and working on our house -- a complete rebuild. I first found GW through the Kitchen forum when we re-did our kitchen about five years ago, and I've become progressively more addicted aver since. My zodiac sign is Gemini, and I'm a Gemini in the kitchen as well. Some days, I just want something quick and easy (but still fresh and from scratch please!); other times I love to putter and spend hours making homemade soups and inventing dishes of one sort or another. Recipes? Not so much... They're good for inspiration, but when I'm in the mood to cook, don't tell me what to do! The toughest part of cooking for me? Figuring out what to cook! What a PITA... Comments (170)Breanne, congratulations! You got it! Nashville Hot Chicken is correct. You probably knew that too. The Music City Hot Chicken Festival started in 2007 and is held on July 4 each year. The princely origins refers to the fact that the dish is reportedly created when Thorton Prince's significant other was miffed that he stayed out late and the next day, she made fried chicken with a significant amount of hot spices to punish him but he instead loved it. He later opened up Prince's Hot Chicken Shack, the original Nashville Hot Chicken. The hottest version sold there is reportedly painfully hot, but that is why people go for it. In the PBS show Mind of a Chef, Sean Brock (Chef of Husk restaurants) went to Prince's to eat and was literally sweating from it. I personally love Hattie B's version of the dish with medium heat. I have never gotten the hottest version and have no wish to try. KFC made their own version of dish and put it on their menus in 2016. Banquet foods has a frozen Nashville hot chicken with macaroni and cheese. I have never seen it in the stores but I generally don't look at the frozen dinner section of the supermarket.
