Olive tree pruning

I had an olive plant two years ago that I had great big plans for, but I ended up killing it at some point. Al had given much advise and vision for what it could grow up to be.
Well I've moved on and got another one. It was a great long stick that I've recently pruned and has now sprouted several new branches. I think this will be nice as a little mini tree, maybe 1-2 ft or so.
I read back to that original post and saw the recommendation to only keep one of every pair of branches. Does the attached look okay?
Any advice regarding how to best complement the curve of the main trunk?
Any specific way to remove a branch? At this point I think I could just break it off with my fingernail.
