Mitred edges for a shortish cook?

We selected our beautiful countertops yesterday (honed Carrara pictured here without cabinet color and hardware). I had initially expressed interest in doing an extra thick mitred edge on the island. I just really like the way it looks. But I'm 5'3 and while there I stood at an island with a 3" mitre and it felt too tall. I also noticed some cracks at the seams where the mitred edge is connected to the slab. The salesman, who was honestly made me feel a little pressured, told me that I could get a gel matt to counteract the additional height.
So, have any of you gotten the mitred edge and regretted it because the height is uncomfortable for coping and baking or because of chipping?
