ideas for riverside hedge zone 5?

Hi everyone! First of what will surely be many posts as I’m about to embark on a many years long landscaping extravaganza. Current focus: Hudson River frontage, near Albany, zone 5. It’s completely untouched. I’d like to leave it natural but useable - I have a young child and right now it’s full of barberry, poison ivy and thorny wild privets: not toddler friendly. Need to pull those and will build a gazebo just off the riverfront. I’m looking to screen it just a bit - not block the view completely, but provide some privacy. I need a plant that can grow like a hedge with minimal maintenance and no thorns or otherwise poisonous anything. Flowers fine but not necessary. Would need to tolerate periodic river flooding. Soil is loamy/sandy tho I’ve not tested ph yet. I’m thinking viburnum but am a bit overwhelmed by the different types and might be missing some other obvious options? Would appreciate any ideas!
