Contractor Kitchen

Hi all! Our kitchen has an ok layout, but it has always been way too dark for me. I don't want to spend a ton on new counter tops because we hope to move once the housing market calms down a bit. I was thinking to add a backsplash and some under counter lighting this summer. I'm having a hard time finding a backsplash that isn't too busy for these counters. I also worry since it's laminate and not real granite the backsplash tile might be too "thick" so maybe a peel and stick backsplash might work better? I know painting the cabinets would help but oh my word that looks time consuming. Any thoughts? Anyone had luck with a peel and stick tile before?
