In my opinion you should cover all the window trim and just have the glass showing. You are trying to create an illusion that the windows go all the way to the corner and showing the window trim destroys that illusion. Definitely a pinch pleat is the most elegant , and the closer together the pleats the better. But then it depends on the rod you have or are thinking of getting. Whether or not you have a valance box and if you have an existing sheer already. I think you have to go looking or consult someone who makes custom drapes. Without actually seeing things or knowing the look you are after, I can only give you general advice.

Actually the windowpane check fabric looks very country casual. Just ditch the tiebacks and valances. The look will be more open if you simply use one panel in the areas where they've used two. When you pull the panels back so they cover less of the window, you can get stops to put on the rods that keep them from moving. I'm guessing you may want to replace the rods with something decorative since now they're out of sight and may be very utilitarian. Spend the money saved on a new chandelier. That one is terrible and not country casual at all. I prefer light to shine upward at the dining table. Harsh down-facing light can wash out food colors and can cast bad nose and hair shadows on the diners' faces.

Thank you all for your comments! I think you're right, off white would look just fine as long as it's textured/light absorbing enough to not be too reflective. I wouldn't even mind a white on white pattern, potentially, we'll see what's out there. Thanks again, this project has been a while coming to fruition!
