Need help for kitchen walls

We purchased this home last month and redoing our kitchen. We are keeping the shaker cabinets, since they are in good shape (just removing the crown moulding on top, because the previous owner did a really bad job). The sink and the laminate countertops are damaged, so we are getting new quartz countertops: Caesarstone Moorland Fog. The large vent hood is also being replaced. Probably with just a simple stainless steel one.


As you can see from these photos, the previous owners had this peel and stick plastic stuck on, which I assume they did to look like copper. I was originally thinking I wanted to do a glass tile backsplash. But my husband said that we would have to rip out all the existing drywall, and replace it so it's smooth enough for the tile. That is something he would rather just avoid. But the drywall will is already damaged a bit from ripping off the peel and stick plastic stuff that was on there. So now I'm not sure what to do there.
