Wolf all gas range 6 burners or 4 burners plus built in griddle — HELP

Hi all

i have gone down the appliance rabbit hole and i know this has been posted about before but not super recently.

We finally picked our range and decided on the Wolf all gas 36”. Today we went to a Wolf/Sub Zero showroom and they really sold us on the 4 burner plus griddle option. Why? First of all, how often do you use all 6 burners? We probably only do once a year if that at Thanksgiving. Second, we don’t currently slide pots and pans from one burner to the other, as ours are separate not continuous, but who knows, maybe that is a nice feature. And finally, and most important, they explalined that you can use the griddle for tons of things, not just pancakes, such as meats, veggies, seafood, sandwiches, eggs, and on and on. They claim it is easy to clean and nice to have one big flat hot surface to cook on (vs a long griddle pan that you place on top of the burners.

My cons: doesn’t look as pretty, slightly less flexibility, and also, will i actually use it (not to mention the cost).

if anyone has any experience with built in griddles, positive or negative, please post about it and tell me what you think. i’m in a conundrum!

Well, I’m selecting a different 36” range and I’m going with a dual fuel.

But…the range I’m buying is the same one I purchased 23 years ago. it has four burners and the center grill/griddle unit (Lodge cast iron),

The griddle is really handy. Perfect for pancakes, english muffins, grilled sandwiches, black bean patties, etc. The one I will get has a stainless steel cover when not in use.

About the only time I use four burners is during canning season. I don’t actually need six burners.

I have all gas Wolf 48”. 4 burners grill and charbroiler. I have used all 4 burners on a few occasions. A couple of times I had all the burners going and the griddle, I needed the griddle to keep a sauce pan warm. Actually the griddle worked pretty darn well at keeping the sauce pan warm. Beware that pretty new griddle is going to become dark with age. It should season after a time so food will not stick to it. Think a well loved well seasoned cast iron pan. My Wolf is now 20+ years and has had a big workout. Still love that stove. I hope you will be pleased with yours.

cmcvey, Consider what is best for the way you cook. One of the biggest things as you have noted is the flexibility of 6 vs 4 burners. You may still be able to use the griddle as a warming area. Here are few more considerations advantages of an add on griddle -much more heat --2x15-25K vs 15-18K for a built-in -able to change out different griddles that have different properties You can use a thick aluminum griddle if you need even heat. It weighs less, too, for the same thickness. Many people view the aluminum griddle as less in quality because it is lighter but it heats much more quickly and evenly and it responds much more quickly to turning it up and down. You can buy them that are coated and nonstick or uncoated. The uncoated becomes seasoned and more nonstick as you use it but not as quickly as steel or cast iron. An alumunum griddle can be bigger over 2 burners because of the heat conduction properties. This one is the one I have over two burners and is is 15"x23" (345 sq inches). Chef King makes one in steel that is almost as big but might have a little more difference in the way of cooler and hotter areas which is a good thing for many people. The built in might be 11.5"x22" or23"(253-264 sq inches) Royal Griddle advantages for a built in -stability You can get a little more stability on an overlay that is somewhat fitted but it is heavier and the fitted part might vary -You might get a thicker metal. Wolf has 3/4". This will take a lot longer to heat and adjust. -you can more easily get reproducible level of heat every time you turn it on Cleaning is subjective.

Have you ruled out the Culinarian for some reason? I've never cooked on either the BS or the Wolf, but after reading so much here and in Appliances and and experiencing the open burners on my CC rangetop, I would definitely recommend BS for what I consider to be better burners with more even heat. As a side note, please consider asking your DH to back off again. You should not be forced to do anything. Choosing a range needs to be a well-thought out decision, not made because someone is throwing a tantrum. You're spending a lot of money and IMHO need to get it right. So what if the decision doesn't get made until your deadline for ordering to receive it in time for install? It's not like the unmade decision sits in the middle of your house screaming at everyone who walks by that it needs attention. My advice is to sit and let the decision percolate in your brain, especially if this is how you normally operate. Don't talk to him about it anymore. Meditate on it in silence for a while without his input. Is DH prepared to store a ginormous box/crate in the garage if you order so early? (lecture over.). :)

Maybe it's the way or what I cook, but I've never needed more than four burners at a time in over 40 years of cooking. I've had my 36 RNB now for about 2 1/2 years, and the built in griddle ranks right up there with the cast iron open burners as my favorite things about this range. I use the griddle daily, and often two or three times, sometimes more so than the burners. Keep in mind the Platinum griddle is not built in, but simply an accessory over two burners, which would be a deal breaker for me, so I'd go either the RNB or the Wolf as far as the griddle goes. Not familiar with Miele's griddle, or if it even is available with one? so can't comment.

If your you are interested in high BTUs, stir fry and use cast iron, I would consider a BlueStar RNB rangetop. https://www.bluestarcooking.com/cooking/rangetops/48-rnb-rangetop/ 22K BTUs but uncapped burners so flame is more upright. It is star shaped so better heat distribution for your cast iron pans. You also mention boiling pots of water so this seems to go with your cooking style. This shows the burner compared to Wolf. It has an open burner tray so it breaks down for cleaning. Wolf has a sealed burner tray, so does not. This is how it is cleaned. Hi thanks for your comment. so how often do you use the griddle for its intended use, ie pancakes, bacon, or as a flat top for searing meat and stir frying veggies?

Hi Suzanne, I use it for grilled sandwiches, last week we cooked steaks on the charbroiler portion and I used the griddle for cooking up onions, green peppers and mushrooms for the steaks. We don’t usually eat pancakes. Two weeks ago we had friends over for burgers we cooked them on the charbroiler and I grilled onions on the griddle while the onions were cooking I put the hamburger buns on the griddle to brown them up. When you get your new stove they will give you instructions on seasoning the griddle. One thing I NEVER use is olive oil on the griddle. I don’t know what it is about it but it leaves the worst sticky residue on that griddle. Pain in the neck to clean it after olive oil. In fact my instructions on seasoning the griddle said not to use olive oil. I use to on occasion fry bacon on it. I don’t know about the new Wolf’s but towards the front of my stove there is a little drain hole for excess grease to drain into the catch tray underneath. Cute concept but a pain to clean. Also that griddle takes awhile to cool down. I have used it to sear meat but the griddle I believe goes up to only 450 degrees. I have found that searing in my cast iron pan is hotter and faster. Hope this helps.
