Aesthetics are really personal preference since both look just fine. Don't you kind of know you prefer one over the other? I just knew I didn't care for glossy.

True quartzite does not etch. You should test for yourself to know for sure. Check out karin_mt's threads about testing quartzite. She is a geologist and very helpful in teaching people about countertop materials and their properties.

We went with honed for our Taj Mahal counter, and part of the backsplash (behind the range) is the same stone. I was open to either leathered or honed, but the slab I liked the most was honed. It still has a little bit of texture, which I love. I think honed is a more modern look, and you don't get the etching as you do with a polished finish. I briefly looked at honed marbles too, but you have to know what you're getting into with maintenance and accept some patina. I think we would have been happy with marble too, but the designer kept pushing me toward quartzite, and we're happy with it.
