Design/build, kitchen + bath specialists, general contractors?

We are remodeling the entire first and second floors of our 100+ house. Back in the fall we engaged with a design/build firm and we have just now finally gotten floor plans for the first floor (status qup for the timeline in my area right now). This includes expanding and completely remodeling the kitchen (including taking down a wall to join the existing kitchen to the dining room for a much larger space), building a mudroom, putting up new drywall, floors and ceiling in our family room (extension in the back of the house), powder room refresh, and swapping out a few closets for built-ins. Phase two will be remodeling two upstairs bathrooms (probably involving some reconfiguring of space) and cosmetic updates to the bedrooms, including pulling out some built-in furniture, replacing molding, updating closets, etc. We think we will get the bathrooms done with the firm and then hire a contractor and painter for the bedrooms.

We like the first floor plans and the firm so far but my husband is balking at the price (~$210 is the estimate without having selected any finishes) and thinks we can get a lot more done for our budget downstairs, so that we will be able to accomplish everything we want upstairs in the bedrooms and bathrooms when we're ready. I've tried to explain to him that with design build you are not only paying for the actual construction, but also the coordination of all the specific laborers, protection from one person screwing up another's work, being able to get the work done all at once, and lots of help with designing and coordinating the touches. We've never done any major home improvement projects before. Can you help me understand the pros and cons of sticking with design/build or bringing our plans to a kitchen/bath remodeling agency or general contractor? Thanks in advance!
