glosssy and matte tiles for kitchen backsplash

My new kitchen in modern farmhouse style will have light wood base cabinets and white wall cabinets, both shaker style. The countertop is Calacatta Venice quartz, white with gray veins. I will have about 48' wide open area behind the range/ hood, where I want to have 2 wooden shelves above the hood for decorative pieces, not dishes. I've found beatiful glossy 3x6 while subway tiles for my kitchen backsplash. They have warm rustic look. I'd like to have an insert above the range with rustic /vintage looking encaustic or mosaic tiles to add a bit of color. I found a few options, but they are all matte or satin. I wonder if they would work with my glossy subway tiles. Also, would I want to take the insert all the way to the ceiling or only up to the hood, considering that there will be 2 wooden shelves above the hood?
