renovating kitchen changes things. you may change mind about seating. large window/small table and chairs/cute rug etc... otherwise freestanding vs built in maybe on side wall??? perhaps do the kitchen primary area and wait a bit. budget issues a factor if doing built in .

Window seat with small table, power outlets installed on the wall, and you have small nook for sitting to look at recipes, coffee with a friend, or even home office area. Lower cabinets & countertop, or low mobile work cart for a baking center--shorter prep surfaces are really useful. Lower cabinets with trash/recycle/compost pullouts.

If you add any kind of built-in cabinet or window seat, be sure to plan for a toe-kick outlet for that vent.

It's not just "changing the window" as the proportions of the windows to the house need to be considered and whether that adds to the overall "look" of the exterior. Any changes like that have an effect outside as well as inside. Plus there's the siding to consider and how easy/difficult it would be to have the exterior match existing finishes.

I would wait until the kitchen is done to decide what to do with it. If the view was lovely from the window, I would be tempted to put a small table and chair there to enjoy the view.

You could make the adjoining wall your cookbook library and set the table there for meal planning.

Or have a fold-down/flip-up countertop for extra space in a pinch.

Bar cart...baking center...extra wheeled cart to be used as needed....

If you can afford to do the option of changing the window ( just moving it up to counter height) I'd do that. You can add in a lot more cabinets and counter space by doing that, if you need it!

If not changing the window height, how about this? This is ~48 in wide, which will leave you with about 7" on each side if centered on the wall. This is solid pine.

"just changing windows" if you want to I would seriously price that out. Its not exactly like repainting a wall. we did windows in 2013 then some in 2019. I was quite surprised at the price escalation. Now w inflation/slowdowns/ shortages...just know what you are getting into. It doesn't seem "broke" so you know...dont "fix" . There are options here.... besides ....the windows are a great feature.

Most budget friendly may be Maureen's suggestion of the free standing bar with the mini-refrigerator. It gives flexibility if you decide to move it, say to the dining room or patio, plus the space can be converted back into a seating area. You can place it on the wall perpendicular to the window. Note you'll have to figure out how to access the light switch or else get a similar unit without the attached shelves, and the light fixture can be swagged over to shine above the bar countertop.

I would put a free-standing coffee/wine bar on the wall perpendicular to the window - and change the light fixture so it doesn't look like a table should be in that space.

To the idea of a bar/ wine fridge perpendicular to the window…it won’t be weird that it will cover part of the window? If the bar comes out at least 24 inches…that going to come about 22 inches into the window

Maybe a breakfast bar that goes across the window? I’ve seen a few photos like this one but am not sure how this might function irl. If you continued the wood bar to the perpendicular wall, an undercounter beverage fridge might work at the end furthest from the window. Maybe some open shelving above for barware or coffee cups?

Not seeing the rest of your kitchen, I’d vote for a section of lower counter under the window. Trash/recycling/compost cabinets could go under. Or if you bake, and it makes sense for layout otherwise, then some cabinets space could be for baking supplies. Perhaps leave no cabinet on left side, and leave space for a chair for a small work area.

Will you post the floor plan of your new kitchen? I see how the window makes having a counter and/or cabinets a bit awkward. My first thought is to buy a nice island cart or bar cart on wheels, and do open shelving above. That would preserve the ability to easily convert it back to a dining space. Or you could do a small bar area with a fridge below and some shelves above. A large hutch would also be attractive, provide storage, and keep the eat-in functionality.

A free standing bar made of cabinets to match your new cabinetry (see the cabinet hack in https://youtu.be/V3RNyrDamWA). That way it both goes with your existing cabinets and you don’t have to change the window.

A small table with a couple chairs in front of the window for a "lounge", and use a bar cart and a mini fridge on the other wall for your libations. Or a window bench with a small table, with a bar cart, etc, on the other wall. I wouldn't put the bar cart by the window...the sun would affect the contents.

That area cannot be decided in a vacuum. It should relate to the new kitchen layout. Post the new layout for suggestions that correlate to what you are doing in the rest of the room. And where is the DR in this home?

If you reduce the window size and move it above counter height, you will have to redo that area of the exterior as well. You also have the floor vent to deal with.
I, personally, don’t like eating at a counter-height bar, sitting on a stool. I find it much more comfortable to sit at a table with my feet on the floor.

Hi... The wife here :) it'll never be used as a dining space. The problem putting anything like cabinetry or a wine fridge, etc underneath is that the bottom of the window is lower that counter height. So anything would be above the bottom of the window. Would that be strange? My issue with putting something n the perpendicular wall is blocking the window or not being able to open the shutters. But maybe we just remove the shutters...? Is weird to put butcher block across above the bottom of the window?

See Fori's picture above to decide whether you like or dislike the look of a bank of lower cabinets. One lower prep area is a really nice thing to have, if you are ok with the look.

Houseplants would probably thrive in that corner. If you don't want furniture there, consider some floating shelves on the unobstructed wall, tall plants on the floor or plinths, art, attractive window coverings, etc. and it will turn into a feature.

It might help to think of this small space by the window as part of the bigger space you have on the other side of the doorway. There's a pretty wide space between your island and the "south" wall--the wall that backs to the mudroom. What are your plans for the rest of that space?

how about a coffee bar or beverage station? I have no idea what you style is, so I'll just post some examples. you could do an old dresser refinished in a cool color, top with shelves, or have matching cabs to the kitchen. you will have to size yours to that wall (not the window wall, the other one)

you could do a wall treatment like open shelves, maybe tile the whole wall, or a beadboard or wood.

maybe do a little counter bar at the window to sit and drink coffee while looking out the window. I'm just throwing out options!

But, if it's possible to do a smaller window, I'd go for this look.

I would remove the shutters and trim from the existing window, no need to remove or replace it.

build your coffee bar on the wall with the counter extending over the window floating shelves above. make the solid enclosed base below the bottom of the window everything above, floating... of course it's all a custom fit. I think the only ready made could be a drawer base to the left of the corner. ...and below the window. Start drawing! looks like a fun project.

I would finish all the remodeling and live with it for a while to see what you think. For the time being, get a tall (6’) healthy green houseplant to set in the corner. It would enjoy the window while you decide. Every space doesn’t have to have something in it.

Definitely remove the shutters -- there are plenty of other window treatments that don't constrain your options. Plus, something like a Roman blind could bring some character to this zone that helps define it separately from the main part of the kitchen in some way...

You don't need a ton of space for a beverage station. Given that your dining room is right there (and probably living space beyond), it would be great to have that out of the busy part of the kitchen, and you could always put an armchair or ottoman for having a leisurely coffee/cocktail when appropriate! :) Center it on the blank wall, and then a plant in the corner makes it all look intentional.

We made the counter as part of the window sill.

I was not thinking about putting anything under the window, but against the solid wall. You are using the dining area as a dining area, yes? Then it makes sense to put a hutch or chest of drawers or storage piece in that corner against the wall for storage of table linens, serving pieces, seasonal tableware, etc. it’s too small for much else, especially if there is a dining table right there.
