Tile countertop

I asked a question about using large format tile with a mitered edge for vanity counters yesterday, but I have a slightly different question today. I like the thin, flush countertops of modern European cabinets. Would it be acceptable to attach one piece of large format tile to a cabinet top with a vessel sink if the large format tile is the right dimension to have finished edges? For example, if I had a 24” wide x 21” deep vanity, could I buy a 24x24 tile to be cut down to 24” x 21” and attached to the top? There are way more color options in tile than in the other countertops I’ve looked at. I could get a through body tile if tile edge color is a concern. I’ve attached an image of the thin countertop look I’m referring to, but I would attach a vessel sink on top instead of an under mount. Thanks in advance!
