Do I remove the shutters or update them to modern shutters? We are also updating the trim color on the house we are not painting the brick.
Remove the shutters on the large windows but keep them on the smaller ones. See if you like that before removing all of them. The shutters are far too small for the large windows but the size is correct for the small ones

I did two versions of removing your shutters. I like the one with shutters on the left but not the right. I might change my mind if you do a drastically different trim color.
What color will the trim be painted? If it is dark, that might be enough definition without shutters. Without is more modern.
I like the ”totally without” photo. What a handsome, distinguished home. All it needs is some attention to the overgrown shrubbery. I love it.

I did some very crude visualizations of SW fan favorite, Urbane Bronze and SW Shoji White (not sure why it looks like two colors on the Soji one). You have some very nice detailing on your trim and porch. IMO, the dark trim hides that. RE: your landscaping, you could cut everything really far back and it will grow back to the size that works. Don't fear the shears!
