Advice for replacing baseboards

We have a typical late 90s style suburban WI home. Lots of golden oak and annoyingly basic millwork. I'd like to replace every bit of woodwork in this house starting with the baseboards then eventually moving to doors, jams and window sills. Any advice on baseboard trim? I am not interested in painted. I'd rather stick with wood. The standard 3-ish inches in height is good, perhaps slightly taller would be fine. I guess I am wondering about profiles and such. I have noticed friends in newer houses tend to have really basic flat millwork. It looks clean and super easy to install. I'm just not sure what is considered appropriate these days.
