Novel problem: too many tomatoes

It's actually an open faced sandwich, but you might as well do two! spread a good layer of peanut butter on bread (I think creamy is best here) Next, a couple slices of your favorite tomato sprinkle with seasalt and lots of fresh ground pepper! It's absolutely delicious! . . . I decided to try this . . . (I did not make it open-faced having forgotten that part.) One of my favorite sandwiches is slices of sweet onions with peanut butter on toasted bread. So, why not?!? Strangely, the 1st bite - I could taste onion! No, I think it was entirely in my imagination. It is really very good! I cannot remember having peanuts with tomatoes . . . I'm trying to think . . . but, the flavor is not unlike sunflower seeds with tomatoes. That would be like a favorite salad of fresh tomatoes, avocados, sprinkled with sunflower seeds and croutons. Comments (11)WE like shooters' sandwiches. Take a Vienna loaf (log-shaped firm bread) and slice through horizontally, hollow out slightly. Cook sliced mushrooms, enough to line the hollowed out part, and then some rump steak to cover the mushrooms. Season to taste and place the bread lid on, wrap firmly and place in the refrigerator overnight with a weighted board on top to squish it all together. Serve in slices. Mmmmm. Or pizza bread. Roll out bread dough in a large rectangle, make slanted slits down either side leaving the centre third intact. Layer your favourite pizza ingredients on the centre third, including cheese. Draw the strips from the side sections over the filling to make it look like a braid on top. Bake as you would a loaf of bread. Comments (35)Sure Pat, I'm not sure this will qualify for your Louisiana favorite but it is good tasting. Quantities are not exact. You can adjust to your liking. Olive Salad Spread pimento stuffed green olives,black Greek olives,Calamata olives --we get our olives from the olive cart in the deli. 2 spoonfuls of each olive type. Maybe 16 of each type? 2 TBS capers, drained 1 celery stalk, chopped 2 carrots, chopped 2 roasted red peppers in oil, chopped 1 sml red onion, chopped 2 tsp celery seed 2 tsp oregano 3 cloves garlic, crushed fresh ground black pepper to taste olive oil, start with 1/4 cup, you may need more Put all ingredients into food processor. Pulse a few times to break down the veggies into small bits. You want the consistency to be of a paste for spreading but still be able to see the veggies. Put the spread into a covered bowl and let marinate over night. It keeps for about a week in the fridge. Hope this helps in your search Pat!
