Unfortunately, the baking soda reacted with the wood and has "weathered" it. I don't think there is a way to fix it other than covering all the wood up with paint, a dark stain, or, applying a baking soda mix to everything so it matches. Baking soda reacts with tannins in the wood. Pine doesn't have tannins that I'm aware of. I cannot tell if the wood is indeed pine, or cedar, or something else. Looks like the wood just has a linseed oil finish. But linseed oil would not bring that much color out of pine. If it is pine, most difficult thing would be matching the color. You may be able to sand it out.

It should be possible to determine the age of the t&g - I cant tell from the photos what's what. If its original to house then you should keep it and create your own version of "coastal" instead of replicating exactly what you see out of a magazine (which is not to say you cuoldnt or shouldnt borrow colors/ inspiration from it). Why? Because early 1900s wood was still coming from the old growth forests that once covered most of eastern north America. It is an entirely different thing than the soft splintery farmed wood of today - crappy because of the growth accelerants its given. The old growth wood, even pine and fir isvery fine grained and hard as nails. and worth $$$ as salvage so I hope if you removed any of that that it didnt end up in landfill or firewood. If it is/was just some of that knotty pine panelling from the 50s-60s- still better quality than today, but imho removing it wouldnt be a major no-no as is removing/destroying the old growth stuff.

You have a lot of great woodwork to work with!! To prevent competing with the wood you already have in your space, consider a square or hexagonal tile at least for the kitchen and dining area. The living room could eventually work well with a stained concrete (if it's ground floor) with a large area rug to keep the space warm and comfortable but a little more sanitary and low maintenance! The one no-no would be wood-look tile. This tile palette would be a great way to start to update your space with a little more contemporary feel : Slate tile would pull some of the tones of the millwork for a cohesive and rustic look considering the majority of finishes you currently have: Best of luck with your project!
