The Wolf gas range does not have the blue interior and does not have the chipping. We bought Wolf for their supposed "great service" but were very disappointed. There are definite differences in gas and electric ovens. Of course you can bake in both of them, but some people might have a preference for one or the other. Gas ovens produce water as a byproduct of combustion but they have more ventilation so moisture from combustion and what you are cooking vent out so gas is more drying heat. You also will get more heat and moisture dumped into your kitchen. Electric heat does not produce moisture but tends to hold onto humidity from what you cook so are more humid. This will have some effect on what you are baking. The added moisture promotes starch gelatinization so may allow a little longer rise in things like bread or cakes. It also affects the crust. The electric ovens will hold onto added moisture that you might add while baking bread. You can use a cloche to keep moisture around your bread in a gas oven. A gas oven because it is drying promotes the Maillard reaction and therefore browning. This is why many like it for roasting. Drying is also good at the end of baking so that you get that browning which contributes to flavor. If you have an electric oven with convection, you can use the fan when you need the drying effect of more air movement. Electric ovens are as freidajune says can be more complex. They might have additional elements that can direct the heat, more from the top(for roasting) or bottom and may have elements in the back that are in theory supposed to provide more even heat when the oven is full. Some ovens have a variable speed with the fan but very few actually mention this in their manuals. They can also have little oddities in the way they work. You might consider the broiler. Some gas ovens have an infrared broiler which can be very small. I tend to broil trays of things so like a wider electric broiler. Regular gas broilers don't get as hot because the heat goes up.

Thanks to all you review submitters! We're having to replace our 20-year old dual fuel 48" Thermador which since Bosch's acquisition is impossible to repair or maintain. So, dilemma: Won't pay $15k for the high- end ranges (dubious of even their reliability and support) but don't know if the Chinese knockoffs (Forno, Z-Line, . . . ) are gonna suffice. Seem to have high incidences of not everything working out-of-the-box, possible issues with termperature control, and even safety: hot stove fronts and knobs, gas leaks. Don't expect good service, or any at all after a few years, but hope they'd last 5+ years. Also, nobody e.g. (Home Depot, Lowe's) has a floor model to look at, which we like to do when making such an investment. Anyone know where one can be seen in the Sacramento area? @Heather Spencer I'm not a pro but I dove into the ventilation question a bunch when I was looking at what to do in my own kitchen. There are a ton of posts on it here, too. ventilation is pretty location dependent as far as what you can get away with, but what you should do is use a hood that's sufficient for the range you buy, and provide the makeup air system that's required for it. If you are anywhere that has cold seasons, or if you live in a tight house, you need to have makeup air. Passive systems work in temperate climates, but not so great in cold climates. The makeup air system is designed to prevent a backdraft situation with combustible appliances. In a cold climate with good insulation, houses don't leak, which means your hood vent will suck more air from your house than can be replaced by leaky doors and windows, causing a dangerous situation. The higher the CFM, the harder it is to replace the air without a system in place (gas dryers, gas water heaters, gas fireplaces, and even bath fans contribute to this calc). For a 48" range you need a serious range hood (Wolf recommends 1100 CFM for their 48" range if I remember correctly). Anything over 400 CFM typically requires makeup air. I ran through the calculations in the code in my state when I was trying to decide on a range and found out that it didn't take much to throw me into full makeup air system, so I decided to go with induction. If you choose a 48" range and pick a lower CFM range hood, you'll end up with smells and smoke, unless you just have the range because it's pretty and don't do more than boil water or make grilled cheese on it. So, in order to do it properly, it costs money. More in cold climates, where makeup air needs to be heated. Less in temperate climates. My builder estimated about $5-6k for the makeup air system (not including hood). I priced out what I would need from fantech, and it got me close to that number. So it is true that the ventilation + hood can be as much if not more than the range itself. ETA: this isn't specific to 48" ranges - Wolf recommends 500 CFM hoods for their 30" dual fuel range, so it's more about the power of your range than it is about the size of it. But generally the bigger your range, the more power it has.

Chiming in late, but in the event you haven't purchased take it from a very disappointed Kucht owner. I had a dual fuel range that with an oven that died in about a year and a half. To their credit they replaced it with a newer all gas model (but wouldn't give me a warranty) and that oven died in less than 6 months. The company won't even answer my calls or emails so now I'm facing having to purchase a brand new 36" range. Not an expense I had bargained for. You get what you pay for and in this case what I got was pure misery.
