Mulch in winter

I’ve read that it is good mulch in winter to prevent damaga from freeze-thaw cycles. Ive mulched some of my beds but still have more to do. We are in zone 7a. Does anyone here get away with not doing it and not have any plant death in this zone? I dont remember my grandmother using mulch at all as a child in her large beautiful garden. We have a mix of perennial flowers as well as deciduous and evergreen shrubs. Thanks in advance!
