I'm trying to imagine the impact of a white grout vrs a matching grout to the tile? I can see that white makes the light blue pop more and the blue grout makes them blend in, but not sure what is a better look? Feels like one is bolder and the other more subtle. Or am I over thinking???Stainless steel appliances and brushed copper faucet and handles. FYI - (I am Original Poster just with another name!)

Yes, white grout will make them pop and a matching grout will make them blend in. But as to which is better, it's really a matter of personal taste. How much do you want to see the grout lines and have a distinct grid, vs. how much do you want the backsplash to read as almost a solid color from a distance. Depending on how pale the blue is, white might not give you very much contrast. You could also look at varying shades of gray.

pick a light cool gray grout. It really does matter what shade of blue, though. some are very cool / icy in tone...whereas some others are warmer [more yellow in the color] and some actually veer to teals . A warmer blue can actually take a very light putty color grout. so it depends. Do you know the actual tile to be used?

It might also depend on how busy your countertop will be.

White will make a feature of the brick pattern, while a pale gray (or blue if it's available) will make the color more of a uniform wash. Just depends on which you want, and on whether there are other patterns in the space.
