Backsplash, countertop and island in all white kitchen

In the process of getting our kitchen renovated. White cabinets (benjamin moore OC 27) have already been installed. Flooring is white Calacatta tiles with light grey veins. We have an island that is black. Now we are stuck at the selection for what to do with backsplash, countertop and island top. Cabinet handles are yet to be installed so far the contractor has suggested black ones. Initial idea for backsplash was to get tiles with some hint of black grey white top pull out together and have white counter tops with grey veins for island and kitchen. But then he suggested to go with quartz for the backsplash as well.
Now we have looked at many pictures and visited many showrooms and all seem to go with white base and just a few black veins with grey.
I am very concerned that kitchen being all white, could it make it look dull/boring and other concern is keeping it clean - wiping stains - coffee tea food colors etc. Looking for suggestions whether first the look is ok or not with what we are planning to go with. Then it's a big no no interms of maintenance or any tips for the stain concern. Any tiles for the backsplash or the quartz for the 3 areas is ok. Please advice we need to finalize this real soon.
