Countertop to fit new stove top

Hi all,

I recently purchased a house and installed new countertops but then I wanted to upgrade the legacy and cheap 36" Empava stove top that the original owner installed in there.

The problem now is the old 36" Empava unit has a cut out 33x18.75 but the newer nicer unit I ordered has bigger cut out requirement of 35.75x20.5. Also it seems like pretty much all newer stovetops have larger cut out requirement than what I currently have.

I called the countertop installer, they wanted $200 to make the cut out hole larger, but they cant take the installed countertop off so need to cut the quartz in the house, I assume it'll create massive amounts of dust? Any thoughts on this?
