Can I cook unripe winter squash?

My winter squash vines have produced a lot of ripe fruits, which I will keep until late winter, but the vines are also producing a few new fruits that have no hope of ripening before the first frost in the next couple of weeks. I've read that under-ripe winter squash are much like summer squash.


Do you think I can just cook them up like zucchini or will they be not very good and not worth it?


Any tips or recipes?
