I have a Thermador Pro and chose the model without a timer, self-clean, and duel fuel because I wanted to keep it simple. Fewer things to break and repair. I use the timer on my cellphone since I rarely stay in the kitchen the entire time anything is in the oven.

Doesn’t bother me in the least. I would not use self clean even if it had it and I have individual timers which I use.

Timers run $3-20 on Amazon. Or use the one on your phone. You can even have 2-3 of them for when you're doing more than one thing at a time. You can put them in your pocket when you need to be working somewhere else while timing something. Having one physically attached to the stove seems like useless gimmickry to me, difficult and expensive to replace when it breaks. Haven't had one for decades and I certainly don't miss it.

It would bother me. Timed Bake where the oven turns off at the end of the cooking time is a feature I found very useful when I had family schedules to juggle. I don't have kids at home anymore, but still use Timed Bake frequently. I used it yesterday to cook spaghetti squash -- popped it in the oven in the morning, went to my work out, did errands, came home to a cooked squash for lunch.

Self cleaning feature: too many stories about electronics failing after using the self clean feature. My new GE electric oven has it, but I'm afraid to use it. I try to wipe the interior down frequently & spot clean with Easy Off. My oven's coatings restrict me to the less effective Blue Cap Easy Off. The Blue Star might not have the fussy coatings that restrict which cleaning products you can use. (Yellow Cap Easy Off -- caustic, but works great)

Still, Blue Star makes nice products, judging by the many happy owners here.
