Thinking of converting fireplace into stove backsplash

We are in the starting stages of a large remodel, which will probably include moving our (tiny) kitchen into the existing living room. The living room has a plain/unembellished fireplace set into a brick wall (like literally a square cut into the wall... it's since been bricked over inside so it's no longer usable). I love the idea of putting a stove there and retaining the red brick as a backsplash to be used throughout the kitchen and behind the stove, but I know it will be hard to clean. Is anyone aware of ways to seal/cover brick to make it a smoother and less porous surgace? Also, what do we need to know about putting a hood in where there is a chimney? Is this safe/allowed? In case it is helpful, the brick wall used to be the end of the house, but previous owners added an extension (now functioning as a family room.... likely to be converted to a dining room) behind it. The former exterior is now a white exposed brick wall on one side of the current family room/future dining room, which we'd like to keep intact.
