Comments (31)I hope your dinner party went well. May I tell you about my experience last night? Originally, the plan was for the dinner group to split and dine at two houses. A week ago, the husband of the other hostess passed away unexpectedly. I suggested postponing the meal but the others wanted to proceed, due to schedules and what not, so I said fine, everyone (except the widow) should come to my house. It would be 11 people now, and everyone was sticking with their original food assignment and I would do all the meat. So as not to make the only single person feel like odd man out, I was putting 7 people, including my husband, in the DR and I would stay in the kitchen with the single and one couple. At noon, I receive an email that one couple made a mistake and they weren't able to attend. Oooookay. Now I have the awkward amount of 9 guests (my DR table seats 8) and less of the potato dish, but someone else is also bringing that dish so I'm not going to worry about it since we usually have too much food. I decide to keep 5 people in the DR so I clear the DR table, remove a leaf so they don't look so lost in there, reset the table, and keep the small table set for 4. At 5:45, I get a phone call from another couple that they thought it was next week and they aren't even in town. Ummm, okay. But she was the other potato dish. The guests are arriving at 6:30 and both potato people canceled. Luckily, I had a bag of potatoes and Gruyere cheese so I threw together a scalloped potato dish. Ai-yi-yi. I put the leaf back in the table and reset it for 7. After that it went smoothly. I knew we should reschedule but no, they all wanted to proceed. Comments (33)Wow - thanks again for all of your great suggestions. The party was last night and it was a huge success. "The best holiday party in years" according to quite a few Facebook posts!!! Since I am here on GW, I want to mention that everyone loved my kitchen. I'm sure some people might have just been trying to be polite, but really, I got so many wonderful comments, people mentioning specific things that they loved and people asking me for recommendations and advice! It was great. And the kitchen was absolutely the most popular room to be in. The bar area was hopping!! But eventually, things sort of spread out. I'm not the type of gal who has ever really had a "catered event" in my house, and certainly not anything of this size. I was really appreciating having a server/helper there - especially to keep things cleaned up over the course of the evening. It was weird though, 'cause I kept wanting to offer her drinks and food and I was definitely treating her like a guest! Everything fell in to place perfectly. Coat closet and coat tree fit the bill. The chimnea was blazing away. The crowds were spread out all though the house. People were saying all night how much more fun a house party is than something in a restaurant. Comments (35)I was going to say…North Carolina Lemon Pie looks like what we call Beach Pie. Here is the Beach Pie Bar recipe that we use. Vegetable-oil cooking spray 7 ounces saltine crackers (about 54) 1 stick plus 5 tablespoons unsalted butter, melted 3/4 cup granulated sugar 2 large egg yolks plus 1 large egg 1 can (14 ounces) sweetened condensed milk (1 1/4 cups) 1 cup fresh lemon juice (from 4 to 6 lemons) 1/4 teaspoon kosher salt Confectioners' sugar, for serving Step 1 Preheat oven to 350 degrees. Spray two 14-by-4-inch fluted-edge tart pans with removable bottoms with cooking spray. I use one 9x 13 pan with Parchment paper because I am not Martha Stewart. In a food processor, pulse crackers until finely ground (you should have 2 1/4 cups). Add butter and granulated sugar; pulse to combine. Divide mixture between pans and firmly press into bottoms and up sides. Bake until golden brown, 15 to 20 minutes. Step 2 Just before removing crusts, whisk together eggs and yolks, then whisk in condensed milk, lemon juice, and salt. Remove baked crusts from oven and carefully divide filling between pans. Return to oven and bake until set, 12 to 15 minutes. Step 3 Transfer to a wire rack and let cool completely. Refrigerate until cold, at least 2 hours and up to overnight. Remove from pans; dust with confectioners' sugar. Cut into fingers or squares; serve. Cook's Notes This recipe can also be made in one 9-by-13-inch rimmed baking sheet. Comments (15)Oh, yeah, Percy. Percy wasn't moved because he (yes, "he" although some people--not his vet-- are adamant that Percy is a she), might be a tripping hazzard. Percy was escorted out because Percy isn't the nicest of cats. Sometimes he can be sweet, but he can also regularily be an a whole who will swat at guests. Most adults know not to rush up to a cat, but kids are naturally less saavy-especially if they happen to have a sweet kitty at home. Percy tends to avoid people and usually shows up at the Conservatory when it is cold (despite having his own warm quarters.) He is a sucker for a warm antiquated heat vent. Cats have lived at Longwood for years as part of our Integrated Pest Management team. They keep the mice and moles at bay. They each had their own indoor living quarters in different area of the gardens. Vet care also. They were crowd favorites. But our cat population has dwindled to just Percy due to two cats (Primo and Spooky,) each being adopted this year by Longwood employees. They are now living like divas outside of Longwood. And the guy who escorted Percy with that viral "He always shows up at the most inopportune times" is a dear friend of mine. Super nice guy with a dry sense of humor....See MoreUser
