Mitred vs laminated edge for kitchen countertop

My contractor showed up to install the solid surface (kstone) kitchen countertop. It has a laminated edge and what I was expecting was a mitred edge. We are at a stand still as I pointed to an email correspondence where I asked for a mitred edge, and he then showed me the tiniest foot note on the drawings that says laminated edge.

At this point my only option is to keep the uninstalled countertop not to lose money. My question is: Is it possible to do a mitred edge on a countertop that already has a laminated edge? As I said above, the slabs are not installed yet. Your expert opinion is greatly appreciated. Thanks
