New life and light to a dark kitchen

I am brightening up a dark kitchen with what I hope will be clever and impactful changes, without a total remodel.

First, we will remove some cabinets (uppers) to make space for a custom box bay window measuring 60(w) 53(h).

Question 1: would you remove the traditional cabinets currently flanking the window, or - remove the corner cabinets and reconfigure the traditional cabinets?

Question 2: the custom window will be a picture window in tue center, flanked by 2 casement windows. Would you add any architectural detail/grids to the picture window or leave it completely open?

For context, this is on the back of a cape and we want to see more of the yard.
