Recirculating (ductless) under cabinet hood--where does used air go?

I am in a situation where I have no choice but to use ductless. I had planned to use a chimney style hood but am now contemplating an under cabinet model instead. As I understand, the cabinetry above the visible part of the unit will conceal and house the guts of the unit. I know that in a recirculating hood there are filters that stop some of the grease crud, but the used air still needs to come out somewhere.

Does the recirculated air just spill out into the empty upper cabinet? Do I need to open the cabinet doors when running the vent hood? Will the interior of that cabinet that houses the guts of the unit be gross and full of grease?

If you know about or have a situation like this, I appreciate your feedback.
