Comments (4)I shouldn't answer for someone else, apologies in advance FN, that is what is known in the greenhouse industry as "pad and fan evaporative cooling" -- what you see on this end of the greenhouse are cellulose pads that are kept moistened by a constant, light drizzle of water from above. On the other end of the greenhouse, somewhere out of the photo, is a big fan that moves the air. As the air moves over the moist pad, water evaporates, cooling the air quite a bit -- exactly how much cooling is achieved is a function of factors such as the air flow and more importantly, the dew point/humidity of the air. Pad and fan cooling is very effective in dry areas, somewhat less so in areas that are very humid/high dew point. Comments (4)I myself like to freeze in quart sizes. I never tried OJ before. I never heard of using OJ? I use apple juice one cup per quart (about 5 peaches). NO SUGAR. The juice will prevent drying, freezer burn and oxidation (browning). Peach or white grape juice can also be used. Besides peaches/nectarines, plums, cherries or figs can be done this way too. With your method, I would worry about freezer burn, and I try to avoid sugar. My method fruit should be excellent for 12 months frozen. You should use freezer zip locks and remove as much air as possible. A straw can help do this. Make sure fruit is completely coated, add more juice if needed. If you have a vacuum sealer juice is not needed to avoid freezer burn. You can use 1/2 teaspoon of absorbic acid (find it next to the pectin at the store). Comments (6)A nectarine is genetically nothing more than a hairless peach. Since it lacks 'fur' it's more appetizing than a peach would be with the skins left on and I'm wondering if that is the reason NCHFP says not to blanch and peel them. I'd think it would be more concise to say they don't 'need' to be peeled. I do not care for skins on any of my fruits or many of my veggies and can see no reason NOT to blanch or peel them, in as much as it should not damage or make unsafe the product in any way....See MoreI have peaches, cream cheese, SCM. Comments (11)Yum, that looks good. Someone here posted a recipe for peaches & cream pie that our family loved. I really need to keep better records of where my recipes come. You didn't have enough peaches probably, & didn't mention pudding mix, but... Peaches & cream pie 3/4 c flour 1/2 t salt 1 t baking powder 1 (3 ounce) pk non-instant vanilla pudding mix 3 T butter, softened 1 egg 1/2 c milk 3 c sliced peaches, drained/syrup reserved 8 oz cream cheese, softened 1/2 c sugar 1 T sugar 1 t cinnamon Set oven at 350. Grease sides and bottom of a 10" deep-dish pie pan. Mix flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Arrange the peach slices on top of the pudding mixture. Beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tablespoons reserved peach syrup. Beat for 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top. Bake 30 to 35 minutes. Chill.
