Shallow sink, 15 inch high gooseneck faucet: disaster in the making?

I am installing a shallow sink in my new kitchen. The sink is stainless steel 8 inches deep (plus undermount, so let's assume nine inches depth). I did not want a deep sink and I grew up with an 8' sink and it was just fine and dandy and I noticed when using deeper sinks in other houses I had to bend over uncomfortably to wash dishes.

However, I'm trying to find the right faucet to go with the sink. To simply things I am looking at pull down faucets, but it seems like all such faucets are at least 15 high with a gooseneck. Many go up to 18'.

I'm worried that a 15' high faucet will result in a lot of splashing and sprayed water as the sink is on the shallow side. Or am I overthinking it? My contractor is trying to discourage me from getting a bar/prep sink size faucet as the volume of water might be too low. Or are we overthinking this and a typical 15' gooseneck will be fine?
