Comments (33)Oly, that's a great idea-- and they'll be easy to distribute to the nieces and nephews to take home/back to college too! I just spoke to my nephew-- for a little background, he's the oldest of my brother's kids but he has some developmental issues resulting from a stroke in utero. He is functional but has a lot of struggles as he is an adult with the mental capacity of an 8 yo. He is aware that he is an adult and wants to do adult things but he has a lot off limitations. Anyhow, I described the menu and explained the plan for a "beer garden" theme and he got really excited about some old bay pretzels he had at a recent oktoberfest-- he wanted to bring a small bag he purchased for the party. I explained that a small bag would be hard to share with the whole family but suggested that he come over next week and we'd find a recipe and make a batch. He is so excited-- he told me "I got this, Aunt Beth!" hahah.. I am thrilled to be able to include him in this way. He'll take GREAT pride in coming up with the idea and making them. Comments (24)Over the years, I've learned to keep large luncheons like this simple. Simple to fix, simple to serve, simple for people to eat with plate on their lap (I'm assuming you are not doing a seated luncheon for 40, but I might be wrong on this point). My go-to for years has been Cheese Strata - yes the kind of recipe found in the old Junior League cookbooks. The beauty of this is that you can make multiple flat pyrex pans of it days ahead of time, cover and refrigerate. The night before, pour the cream/egg mixture over the cheese/bread and re-cover. Bring it out early the morning of the party to come up to room temp and bake. I have silver stands for Pyrex dishes so they always look nice on the buffet table - you only need one - just replace with a full Pyrex pan of the stuff. In the spring, I like to serve fresh asparagus (which can be served hot or cold) and a seasonal fruit salad with poppyseed dressing. I've never served this when there was a single crumb left. People love this!!!! That's why the recipe has been around for decades! Over the years, I've further simplified this recipe. I tear the bread into small pieces, and pour melted butter of it, as opposed to all that cutting/buttering. I don't even remove the crusts - I use GOOD bread. Comments (18)The brunch was fab. Lots of good leftovers. I couldn't corral anyone into grilling the turkey sausages so I skipped them. No biggie, we can have them any time later. I'm also glad I did three bean salad instead of the white bean tuna salad. That allowed the smoked salmon to be the star, and good on that because I bought the really expensive stuff since it was the lowest in salt. When I realized no turkey sausages I threw some feta on the three beans salad for a little extra protein. It was very colorful, served in a cut glass dish, with home grown cherry tomatoes and green pepper, plus some celery and scallions and some fresh parsley. I lost my phone and my camera is stashed away so no photos. The roasted sweet potatoes, red onions and squash was a great side for bagels and lox and matzah brei. I got distracted at the end and overcooked the matzahbrei but it was OK, lots of other good things. The melon was particularly delish . . . I forgot to add that I served sparkling cider as a beverage. No one wanted coffee with dessert, so I have it ready to go in the coffee maker for tomorrow morning. I tried some new yogurt for on top of the apple crisp, it was Chobani cinnamon vanilla lower sugar greek yogurt. It was on sale so I got a few other flavors to try. It was very good!
