If I were you, I would not worry about painting before you move in. Years ago, I worked with a builder who did not offer any choice in paint, either. After a year or so, I had changed my preferred style and colors, and then I chose the paint colors. And I had no regrets. My neighbors all did the same. It seems like a big deal to paint after moving in, but it really wasn't. Ten years down the road, we did it again. Now that I've written that, I'm remembering Houzzers who have recommended living in a home for a year and noting how the light changes seasonally before choosing paint colors! And hey! We chose a lot of upgrades, but most of our neighbors did not. They made changes as time went on, and their homes were lovely. We all ended up with hardwood floors, crown mouldings, backsplashes, better light fixtures, decks or porches or both, improved landscapes, and on and on and on. The neighborhood supported the upgrades just fine! We and others who sold made good profits on our homes, and the dear friends who still live there continue to enjoy their homes, decades later. We didn't have the option of choosing the most expensive builder, but we were happy with the quality...and we had the BEST neighbors! (I will say that I was there every day to check the quality. Most days, that only took a few minutes.) I wish you well!

Honestly, you're being too hard on yourself. It is very nice, and you're just seeing a difference because you haven't finished decorating. What are you doing for the backsplash? Many times that can tie things together. I think I commented the same comment earlier this week on a similar kitchen. Once everything is in there, you won't give it a second thought. My white cabinets don't match my white countertop or white backsplash. The cabinets don't even look like they match in some places (lighting). It's ok. Take a look at some pictures on houzz and see if you notice differences. I think you will be delighted when you finish.
