Hex tile backsplash finish?

I am putting up 2 inch hex tiles for my kitchen backsplash. After removing old backsplash, there are some peels in the wall that need to be covered up. I am deciding how to finish that wall and the installer is coming in 2 days. Please help!


Here is what I want my tiles to look like with 1/8'' white grout.


Here is what my kitchen looks like now with the new countertop and removed backsplash.



A couple ideas:

1. Fix the peel and paint over the wall (Is that possible? How is that normally done?)

2. Cover that wall and align under the cabinet and finish at the edge of countertop, finish with pencil trim or schluter trim (seems most traditional but I find it odd looking...)

3. Leave the hex tile's organic edge (I get this idea from creative tile finishing. However, the article didnt mention how these edges are sealed? Do I caulk it? Paint it? How hard is it to maintain? This wall is not close to the water or the stove)
