Comments (5)I made great blueberry jelly/jam last night. I cooked my berries (sorry I don't recall how many I used, probably 2 quarts, I started with a gallon but they had been heavily munched o:) ) in a saucepan with 1 c. Juicy juice 100% natural grape juice blend (mostly apple juice). I ran it all through the food mill to come out with a perfect 4 cups of juice. Then I followed the Ball No-Sugar-Needed Pectin recipe on the inside of the box of pectin and used 2 c. sugar to sweeten. This turned out perfectly and my husband has already enjoyed it along w/ half a loaf of sourdough. :)I like the no-sugar-needed pectin because I want my jam/jelly to actually taste like the fruit it come from!...See MoreRECIPE: The best Blueberry cake
Comments (4)I want to note that frozen berries can be used in this cake. With folding in the berries dont be too hard on them as they will bleach the blue in the batter and does not look so good when cake is sliced. Frozen blueberry salad 1 (14-oz) can sweetened condensed milk 1 (20-oz) can crushed pineapple, drained 1 c. chopped pecans 1 (8 oz) Cool Whip 1 can blueberry pie filling Combine condensed milk and pineapple. Stir in pecans and pie filling. Fold in whipped topping. Pour into 9x13-inch dish. Freeze. Comments (5)Well, I will comment on my own query as no one responded. I ended up making this recipe for Spiced Blueberries from "Food in Jars" blog, and it is very tasty! I did a couple of pints with fresh berries, and filled out the last pint with frozen berries. After I open the pint made with frozen berries, I will try to remember to report back here for some feedback on the use of frozen berries in this particular recipe.
