Growing a boxwood to look like an olive?

There’s a large boxwood tree (labeled as buxus sempervirens) at the Morris Arboretum in the greek-style garden that looks a LOT like an olive tree — it’s gnarled and loose and I didn’t realize it was box until I saw the label! I’d LOVE to do something similar in my garden, but I can’t find information about growing natural-looking box anywhere. Suggestions and resources much appreciated!
