Counter trim, what should we do?!

We bought our slabs back in January and our contractor said they would work for our project. We even made our island smaller (per the contractor) so we could use these slabs because I love them so much. We are at the point of install and they came to take measurements and are now telling me there isn’t enough material. Their solution is to use liminations (the scraps) for the edging on the island. Which means any markings won’t match up. I’m so upset. We’ve spent a lot on the remodel and I don’t want to cut corners now, but I’m having a hard time finding new slabs.

What are your thoughts? Do you think it would look bad? We don’t have too many dark veins. It would be the bottom of one of these slabs and it would only effect the front and back of the island, the short sides are fine.
