Since you will likely be keeping heavy pots/pans and baking dishes in the drawers near the cooktop, I would worry about the 45" drawers, too. Can you use 36" drawers with a 9" pull-out on each side of the cooktop? One for oils and vinegars and one for spices (or other items needed for cooking). ETA, I don't think top and bottom cabinets need to line up exactly, but if you want symmetry in both, maybe 15" and 30" would be closer to lining up with the top cabs?

I would want some landing space beside the ovens, so would switch for a drawer base and upper cab.

We considered the 15" pull outs next to the range. We aren't convinced they are useful. We didn't find options in the pull outs that we liked, mostly bc the racks are wire. And who hasn't been annoyed by shower caddies with similar set up? The items always slide and sit awkwardly.

Regarding the 15" pull outs. They aren't very useful in my estimation as spice storage. But, they are very useful when adapted for oil and vinegar, long utensil storage or sheet/baking pans. There are many adaptations beyond the traditional. There are lots of pictures of adaptations.

If you were to keep the 45" drawers, be certain to spring for the heavy weight drawer slides. Those drawers will end up carrying a large load. I found that drawers around 36" are a good size. If you have an island planned, give up the need for symmetry. The island will hide any asymmetry.

You should also post the floor plan with dimensions. The first rule of kitchen planning is function, then form. Free tip: Drawers are your friend. When given a choice, choose the drawer base cabinet every time. They hold so much more than shelves. Don't fall for the door with internal sliding shelf. It's less efficient. It's two movements to get something. Drawers are a single movement.

I have one 15" set of cabinets (one base with upper). 15" drawers are at the end of a run, and hold flashlights, batteries, 'junk' and small hand tools--pliers, screwdrivers, etc. You could keep sheet goods, pot holders, utensils--spatulas, whisks, ladles, etc. in them.

The wide drawer worries me, I like one skinny one for tray storage, the other I have for utensils (so they aren’t on the counter). Otherwise the rest looks fine but hard to say without a plan. The pantry I would replace the whole lower section with drawers, why have pullouts behind doors?

Now that I see the floorplan, I would redo the stove elevation. Center the rangetop with the center of the sink. Design the remainder of the cooking elevation from that center point of the rangetop cabinet. This will cause the cabinet at the open end of the run to be reduced in size. Then, match that size cabinet on the other side of the rangetop cabinet. The remaining space on that elevation should be a either a pullout or small drawer stack. It could also be a small pantry cabinet if the remaining space will accommodate it.

Mama goose it correct in suggesting that drawers be substituted in the cabinet next to the oven. Much better use of the space.

This is all very helpful! The current layout dies not center the stove and the sink. It bothers us and we requested plans match them up. It isn't part of the current plan because the contractor seems set on symmetry on the range wall. But I like the solution offered here.

I guess I should be more clear. Our old kitchen doesn't line up the range and sink. We wanted the new kitchen to remedy that.

Now is the time to make the alignment adjustment. It's your kitchen. Unless your contractor comes up with a darn good reason to not align, such as a vent stack, do what you want.
