I can't say enough good things about induction. Having lived with gas and electric, I'll never be without induction again.

Perhaps you could consider a small, flush mounted, 2 hob induction unit such as this one:

It would serve both as counter surface, and as induction surface. It takes a good quality fabricator to do the flush mount, but it's not uncommon.

I use mine daily. When I cook bacon I put paper towels around the skillet to catch the grease. I also take it outside onto the balcony.

I have a gas range, I think I want the portability of the plug in. I was considering just eliminating the electric all together. I had heard that portable inductions worked well so looking for input for those times when I want those extra burners.

we used one while re-doing our kitchen. worked flawlessly and still have it but do not use often. only with large gatherings.

we did go with induction only and i will never go back to gas or electric coil/solid surface

We put a paper towel section inder the pot to keep the surface pretty. I think the burner is 6” diameter. Fast and fun. However, we find it has its limitations. Not so fast at heating up a large 10” kettle of water for corn or lobster. I use my electric smooth-top or portable Butane burner for that.

I am actually considering the Duxtop double unite. It seems to be the one everyone recommends but you never know on line if they are just paying for good recommendations. I have checked all my favorite pots and pans and only some of them will work(my All clad) It seems you can get a metal disk to put under the ones that done work. I wonder if that really work. I do have a propane range that I can use. It is a fancy Jenn-air thing that would have me spitting if I had paid full price all those years ago. It is duo-fuel gas(top) electric(convection combo)oven. Kitchen gear is a crap shoot. That is why I come to all of you. I do figure is this doesnt work for me I can still just replace the hardwired cooktop and have a conduction unite as well-small money investment.

I have a portable Duxtop induction burner, but I use it only when I am using my Fagor pressure cooker. They work well together, but I have no desire to use the induction burner for anything else - I much prefer gas. The main thing I like about the induction burner is that it has a timer, and so it will go off at a specified time, and so food will not be cooking in the PC too long. Other than that, I see no advantage to it, other than being portable, and I never move it anyway.

One problem with the portable induction burner is that the surface gets very worn looking after about a year or so, and so it is not pretty at this point.

Some areas are subject to rolling blackouts, and my gas ranges will work without electricity. However, we have solar panels in Cathedral City, and so we are not affected by rolling blackouts - or at least we have not been so far, although the power company frequently does shut down power from time to time for one reason or another. We have propane burners we can use for when there are power outages.

Power levels on the Duxtop go up to 1800 watts, and so it uses a fair amount of electricity when it is on, and so I never leave it on for any extended periods of time, even at low levels. Note that the Miele TwinBooster is rated for 7000 W max.

I will say that I much prefer induction to standard electric cooktop, but I prefer gas to induction just as much as I prefer induction to electric. I do like having both gas and induction, however, but I would never want induction without also having gas. I think having both is best, like you said you wanted.

This really surprises me. I have to be very careful not to turn my back very long when bringing a pot of water to a boil. Perhaps the difference between a portable burner vs. a full size cooktop?

What I do not like the gas for is low slow cooking. I have had the flame blow out.

We have duo fuel because our power used to go out frequently and when it does it can be out for some time. These days it is much better. I well recall the year I stopped counting outages at 15. I like having options. I like not having an open flame in my house (I lost a house to a fire) I can just use the gas but I absolutely hate the downdraft on that idiotic Jenn-aire. It collects grease in the fan housing. Very badly designed. Good oven though.
