How to paint kitchen cabinets

In 1970 I painted an old chest of drawers with hardware store paint and a disposable mini roller. I got a mirror finish. For my COVID project I decided to paint my kitchen cabinets. I have used Sherwin Williams, Behr from Home Depot, Valspar from Lowe’s and Benjamin Moore. All their best paint which they all say self levels. All the paint is very very thick. I have tried a mini roller and get an orange peel finish every time. I use a good paint brush and the brush leaves brush lines. None of the paints self level. I have done the same doors so many times I bought a power sander. I have been careful not to over work the paint, but I never get a good finish. I am intimidated by a paint sprayer, but I’m thinking of trying cans of spray paint next. Why is paint today so thick? Does anyone have any suggestions?
