Powder Room Sinktop Replacement

I have ordered a new sinktop and faucet for the powder room. The fabricator will not remove the current one, so I need to get someone else to do that. I am assuming that when the old one is taken out, it will damage the drywall behind the current back and side splash. I don’t have a contractor doing this work - no contractor is taking on a job so small these days, so I’m going to have to use a handyman, and I’m worried about how skilled the person will be at the drywall repair. So I’m wondering if having the new splashes made slightly higher than the typical 4” splash would make sense to disguise any imperfections that remain.

I do know that the short splashes made from countertop material are not in style right now, but I don’t mind them, and the budget does not allow for another solution.
