Casing on top of drywall

Hi everyone,

I've finished renovating our new home's exterior, and I'm turning my attention to the interior. One of the first things I'd like to do is update the windows with a craftsman-style casing, stool, and apron.

I have the urge to do it myself, but I've done minimal interior wood renovations. I'm leaning towards a contractor to do this one right, but I'm still interested in understanding proper installation. Most of the videos I've seen show removing drywall on the window's interior to apply the jamb extension and stool. But my windows are retrofit and have two inches of clearance to play with; is it acceptable to apply directly to the drywall? It seems like there's enough clearance, but I don't know if there are issues I do not see down the road. Thank you very much!
