If that were mine, I would fill it with books and a few carefully-edited mementos reminding me of our travels. There is something intensely satisfying (to me, anyway) about a combination dining room / library, and I've often wished I had space in my own dining area to create such a thing -- even though we do have a dedicated library elsewhere in the house. The very thought of sitting at the long table and reading, studying, working, or just piddling around on the laptop is lovely, and having a room that can pull double duty is a special thing indeed.

Google "library dining room" and you'll see countless examples of this done beautifully. It would very likely throw your "less is more" ideology out the window, but oh, it could be stunning.
