Adding Knotty Pine paneling to log cabin basement

Our log cabin currently has a lightly finished basement. We are remodeling it to add a bedroom & bathroom on the unfinished side. The plan is to do horizontal knotty pine paneling in the living/game area and bedroom, and painted shiplap in the bathroom. The ceilings will be drywall, the floors will be LVP. Here is where I could use some input:

1. We are in a rural area - contractor can either get 6" pre-finished clear tongue & groove pine or we can do 8" shiplap, but 8" doesn't come pre-finished (he would have to finish it himself). There is a big cost difference because of labor involved. I'm ok with pre-finished, but is there is a big visual difference between the 6" and 8" wide boards?

2. The end wall opposite the foosball table (on the other side of the columns) will be a painted dark green shiplap as an accent wall (there will be a shuffleboard table against it). Do the width of the boards need to match the width of the rest of the walls - can you do 6" pine with 8" painted shiplap on one wall? Or would this be a bad idea. Does 6" painted shiplap look too narrow?

3. Should I also do painted shiplap around the area of the wall that juts out (where the chicken sign is)? This is directly under our fireplace. It can also just be knotty pine.
