Do you have any other stone flatwork that would be appropriate to match? Or, a stone or brick veneer on the house to match? Bluestone coping can go with anything, but IMHO looks best with matching bluestone flatwork or colonial style brick (soft brick, not hot-fired), and not much else. For a clean, uncomplicated look (your words), go with a bluestone deck.

We chose NPT Silverstone Ocean. I wanted something that would blend almost seamlessly with our Blue Granite Pebble Sheen. I looked at Tondela Blue (our second choice) and a couple beige/cream/natural color tiles but I kept coming back to not wanting a line of demarcation between the water line and the pebble. Our pool isn't to the tile stage yet (fricken fracken rain) but here's a link to a post that shows the Silverstone Ocean. Look at the third photo down - it shows the blue, gray, cream and a little brown tones in the tile. It matches the sample of Blue Granite beautifully. The tile, in person, has a very subtle sheen to it - lovely. I hope it looks as gorgeous in my pool someday as it does on my patio table. Here is a link that might be useful: Third photo down

This is a pretty traditional option for pool coping, and you could easily update it without doing anything to the coping itself. Are you wanting to give it a more modern vibe or just update it? If you are wanting a more modern look, it could be as simple as adding modern planters with plants that are symmetrical like the black planters in the image below. Stick with neutral colors and straight lines if modern is the vibe you are going for. If you are just looking to update the look and feel, depending on what already surrounds the pool you could build out the deck around the pool, add new patio furniture and a few plants, and it will feel like a whole new space. One ofour projects had a similar coping to yours, we built out the deck using different size pavers and added the modern black planter (behind the umbrellas and pool chairs).
