Help with stove/backsplash interface against stone chimney in kitchen

Have a waterfront (Puget sound) cabin in Kingston, WA. Renovating the kitchen, bathrooms. Design dilemma in saving this gorgeous 2 story stone chimney and working stove that the house was built around. Plan for either a 30 or 36' gas range (would have to convert to propane as no gas line on island) with hood next to this stone oven. Would you just go with a 6" backguard on range to allow stone to show behind the gas range vs 24" backguard or full backguard to the hood and cover the left of the stone stove all the way up. While we love the stone look, leaning away from having too much exposed as difficult to clean. Alternative would be to build out that wall to hide the stone in back and then put backsplash that matches rest of kitchen. Difficult because the stones jut out and would not be aligned with the wall to the left of the stone wall/fireplace. Have not found any design examples of this online. welcome any thoughts or sample pics?
