Bathroom remodel help

Our last vanity (72in) was removed, attached shower was extended, was supposed to be little bigger but he complained about the plumbing in the wall being in the way. So then we ordered a 60in vanity online based on contractor’s measurements, there was some major miscommunication and now there was a gap on both sides. Contractor did some funky stuff to fill the gap.

I’m thinking of getting a larger 67in vanity but will I need to take down the walls and hire a plumber to move the pipes down? This handyman was not interested in doing much of the plumbing.

Any other solutions?
