Should I install new drywall or repair damaged areas?

This area will contain a beverage fridge, wine grid, and countertop. The area above will be tiled on the back wall and mirrored on the side walls. As you can see the walls are damaged from the removal of the wood that was there.





I am not too worried about the area that is below the counter but the area where the tile will go is pretty scary. I don't know if it will be flat enough for tile installation if I patch it up.

What is the best way to get this area ready for tile?

PS. I know this is not a bathroom question but the tile pros hang out in the bathroom.
