Question re: the dreaded split circuit receptacle

I have a 20+ year old home that allowed for split circuit receptacles in the kitchen rather than requiring GFCI. I just changed all the receptacles to decora (for cosmetic reasons), but I would like to connect another receptacle to the current chain (I would rather not continue with a split circuit - the new receptacle will have limited use - smart faucet or undercabinet lighting).

1. Can I wire up a normal receptacle (i.e., 14-2 wire) from one of the split circuit receptacles? I have 120 on the top and 120 on the bottom, so was thinking I could just tap off one of the sides to the new plug.

2. I was also thinking about using a GFCI instead of a normal plug ... can that be done? Given the split circuitry, I won't need protection upstream, and this would be the end of the line so don't need to think of issues "downstream".

Any insights would be greatly appreciated. Thanks!
